Indian-style Salmon Curry

 

 

 

 

Ingredients

2 T vegetable oil

1 large onion, finely chopped

1 t ground coriander

1 t ground cumin

1 t ground turmeric

1 t sea salt

1/2 t cayenne pepper

400g tin chopped tomatoes

10-15 fresh curry leaves

250ml fish stock or chicken stock

1 t caster sugar

Juice of 1 lime

900g skinless salmon fillets cut into 3cm cubes

Freshly ground black pepper

 

Method:

1/ Heat the oil in a large heavy-based pan over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes or until translucent.

2/ Add the cayenne, tomatoes, curry leaves and salt, then pour in the stock. Cook stirring frequently for 10 minutes.

3/ Add the sugar and lime juice and cook for 1-2 minutes.

4/ Add salmon to the pan and simmer for 2-3 minutes, then remove from the heat. Set aside for 5 minutes with the lid on. This will allow the salmon to finish cooking in the residual heat.

5/ Season with salt and pepper to taste.

Improving Your Digestive Fire!

The key to great health!

A couple of weeks ago I spent 5days at Gaia Retreat in northern NSW (Olivia Newton-John’s retreat). It truly is an amazing place where you can relax, eat delicious food, and have exceptional pampering. I have come back a different girl and am committed to taking this time for myself annually so that I can refresh and recharge.
 

During my stay there was a wonderful nutrition talk that I have been itching to share with you.

 

It was all about digestion – the importance of it working well, what causes it to slow down, and what we can do to improve it.

7 Tips for your Kids Breakfasts (& for those of us who are still kids at heart!!!)

I can’t even imagine what it is like for alot of you who not only have to get yourselves sorted in the morning, but also have to dress, feed, & encourage your children. I mean Princess, Gypsy & Clover (my kids – 2 cats & a dog!) take up quite a bit of my attention prior to coming to work, and they don’t even speak!!!!!!!!!


You would have seen alot of studies and research that has shown that kids who eat breakfast perform better in school and also this leads them to have a healthier diet.

 

Same applies for us adults as well! It is a scientific no-brainer that if you fuel the body, it will work more productively for you.

Healthy Salad Dressings

Traditional commercially prepared salad dressings are an easy way to turn a healthy salad into a calorie-dense, fat-laden disaster. Bottled dressings can have anywhere from 8 to 20 grams of fat per serving.

 

Of course, you can buy decent commercial low-fat dressings, or even organic dressings but, more often than not, they are loaded with unhealthy elements like sugar and heavy amounts of heart-unhealthy sodium.

 

It’s hard, however, to beat a homemade dressing!

 

The key to making delicious healthy dressings at home is to reduce the oils and other fats, and bump up the ingredients that add texture and flavour.

Outdoor Exercise is Best – Proven!

For those of you who don’t know, I had never ever stepped inside a gym until I had to do my Personal Training Certification. All my exercise and hobbies have been outdoors from when I was a little girl – running, tennis, athletics, body surfing etc. I just love to hear the birds tweeting, feel the warmth of the sun on my back, and enjoy gentle breezes while I am exercising. It not only makes me feel good physically, but it is also calming and fresh and enjoyable and fills me with positive feelings.

 

And now my personal experiences have been backed up by a research study.

Alcohol & Your Health!

There has been quite a bit of media this week in relation to what constitutes an OK amount of drinking and what is deemed as too much. One thing we do know though, is that in small quantities, alcohol can be beneficial for health. But excess can produce so much damage, that any trace of a benefit is erased.

Which Packaged Foods Are OK?

You know I am a big believer that foods should be fresh, not packaged. I also acknowledge though that we live in a very busy world and sometimes it is really hard to juggle everything, including food shopping.
The best way to compromise on this is to ensure you have some healthy packaged foods that you can rely on!
